We all have that one meal that takes us home, for me it is my slow cooker stuffed peppers! For some it may be as simple as a grilled cheese sandwich and a warm bowl of tomato soup or maybe the quintessential comfort of meatloaf and mashed potatoes. Whatever you desire, you’re sure to love these!
My mom has been making these for years, a recipe handed down to her from her mother that goes back generations. It is one of the most simple, yet comforting, dishes I have ever encountered. For me, there is no other meal quite like it. The best stuff on Earth!
I’ve tried and tried to duplicate the recipe, but nothing ever tastes exactly like how Mom makes it. So, since I’m visiting my parents, I asked mom to make my favorite meal of all time in an attempt to capture the magic of these beauties.
Easy Slow Cooker Stuffed Peppers
16 oz. tomato juice
1/4 cup brown sugar
2 tbsp. dried parsley
1/4 cup ketchup
1 lb ground beef
1 tsp. Italian seasoning
1 tsp. black pepper
1 tsp. salt
1/2 medium onion, diced
1 cup rice, uncooked
4 bell peppers – tops removed and seeded
Directions:
In the bottom of a slow cooker, combine the tomato juice and brown sugar; stir until well combined and sugar begins to dissolve.
I’m a mixing bowl, combine ground beef, parsley, Italian seasoning, ketchup, salt, pepper, rice and onion.
Fill bell peppers with beef mixture, place the tops over the meat and put them into the slow cooker.
Cook on low for 8 hours.
