It’s Halloween! We all know that a quintessential component of this day is a sweet treat! Cookies are by far one of my favorite things to bake, especially when the weather gets colder. So what better way to celebrate than to get super sugarfied (is that a word?) than to eat cookies? …before you eat all the candy the kids bring home, that is!
Here’s a recipe for Halloween sugar cookies:
For the cookies:
- 1 ½ cup butter, softened
- 2 cups sugar
- 4 eggs
- 1 tsp. vanilla
- 5 cups all purpose flour
- 2 tsp baking powder
- 1 tsp. salt
In a large mixing bowl, cream the butter and sugar. Beat in eggs and vanilla. Slowly incorporate the dry ingredients. Once mixed, chill for at least one hour.
Preheat the oven to 400 degrees F. Roll out the dough to ¼ to ½ inch thickness. Cut into shapes with a cookie cutter.
Place cookies 1 inch apart on an ungreased cookie sheet. Bake for 6-8 minutes, or until slightly golden on the bottom.
Let cool and decorate.
Icing:
- 4 egg whites
- 4 cups sifted powdered sugar
- 1 tsp. lemon extract
In a mixer, beat egg whites in a clean, large bowl until foamy. Gradually add the powdered sugar and lemon extract. Beat on high speed until thickened. Color with desired colors.
