We’ve all heard that pork is the “other white meat”. Kind of a boring way to promote something if you ask me. Pork is a great, healthy alternative to chicken if you’re looking for a lean protein to fill you up if you’re watching waist line as we enter into the new year.
Your slow cooker is your best friend when it comes to healthier cooking! If you are looking to trim a few calories out of your routine menu, your slow cooker can help pack a punch of flavor without all of the added calories.
This recipe is also a great go-to meal for busy week nights! I served mine on my homemade dinner rolls. Top the sandwiches with coleslaw, cheddar cheese and extra bbq sauce. The meal is complete with a side of baked beans!
BBQ Pulled Pork
Ingredients
2 lb pork shoulder or pork roast 2 cups chicken stock
2tsp. smoked paprika 2 tsp. garlic salt
1 tsp. black pepper ½ onion quarted
1 jar bbq sauce
Instructions
Add all the ingredients, except the bbq sauce, into the slow cooker. Cook on high for 4-5 hours or on low for 6-8 hours.
Once the pork has reached 165 degrees, remove from the slow cooker. Shred the pork and smother with bbq sauce. Serve on bund with extra sauce, coleslaw and cheddar cheese.
